Southwest Salad

This is one of my favorite salads right now that mu friend Sarah introduced me to. It's from the Best Bytes recipe book. Great cookbook if you ever need a gift or want to try some new recipes. I dont put the red onion in or the cheese and it's still pretty darn good!
Southwest Salad
Cherry tomatoes
Tortilla strips
Avocado
Red bell pepper or roasted red peppers
Roasted corn (Put frozen corn in pan and roast for about 10-15 minutes. No oil or spay needed.)
Black beans
Red onion
Lettuce mix
Mexican shredded cheese

Cilantro Dressing:
1/4 cup fresh lime juice
1/4 cup white wine vinegar or rice vinegar
4-5 cloves of garlic
1/2 tsp of kosher or sea salt
2 teaspoons of sugar
1 cup of canola oil
1/2 cup roughly chopped cilantro (stems removed)
In the jar of your blender, combine lime juice, vinegar. Sugar and garlic, sugar, and salt. Blend until ingredients are combined. With the blender running, add the oil in a steady
stream. Add cilantro and blend until cilantro is broken down,
I think I blended it tto much because the first time it had little green pieces of cilantro. Maybe dont be quite so blender happy as i was and it will look prettier!
