Cucumber Salad

2 cucumbers

1 purple onion

2 pkgs tomatoes

Garlic Salt seasoning

Rice Vinegar

Olive Oil

Coarse black pepper (not pictured)

Slice the cucumbers thin, quarter the tomatoes, slice the onion thin. Put most of the vegetables in a large bowl and toss. (Put some aside in case you make the seasoning to strong and you can add in some vegetables to lighten the flavor). Then pour a little Olive Oil on top (about 3 Tbsp), Rice Vinegar (1 cup), sprinkle a generous amount of Garlic Salt Seasoning (to taste - or depending on if you have to be in close quarters with anyone in the next 24 hours), and then sprinkle on a little coarse pepper. Toss all the ingerdients and taste. Add more seasoning and Rice Vinegar as needed. Let set for about 20 miuntes so the flavors can mix and then enjoy! So yummy and refreshing!
