Roasted Cauliflower

So my friend Anna and I were talking about some easy recipes at the gym the other day and she told me how she just roasts her cauliflower in the oven and how yummy it is. I have always boiled mine so I went home and I tried it. I cut off some florets from my fresh cauliflower and put them on a cookie sheet. Then I drizzled a little olive oil on the cauliflower and mixed it around in it to make sure it was somewhat covered so that I could shake Kosher salt and Granulated Pepper on it and it would stick. Then I placed it in the overn at 400 degrees for 15 minutes. I took it out and it was perfect! No too crunchy, not too soft and was really quite good.

Cauliflower is great for improving heart health and kidney functions, fights cancer, an anti-inflammatory, full of vitamins and minerals and other things. So this is a great food to add to your diet if you are not already eating it. This is an easy and fast way to add it to any meal and I think your kids will like it. I almost felt like it tasted like popcorn. Is that weird?
