Granola Bars

My sister Deanna shared this yummy recipe with me....

Granola Bars

1/2 cup brown sugar

1 1/2 cups honey

1/3 cup coconut oil

1/4 tsp fine sea salt

1 cup 100% all natural peanut butter

2 tsp. vanilla extract

4 cups organic crisp rice cereal

2 2/3 cups old fashioned oats

2/3 cup ground flaxseed

1/2-1 cup mini chocolate chips (optional)

In large bowl combine oats, cereal and flaxseed. Stir with large spoon until well combined. Set aside.

Put sugar, honey, coconut oiland sea salt in a saucepan over medium heat. Bring to a boil. Stir the whole time. Stir for exactly 1 minute so mixture combines and sugar dissolves. Remove from heat and add in peanut butter and vanilla. Stir until smooth. Pour this over your oat/cereal mixture. Stir until well combined.

Let it set for about 5-8 minutes. Grab a jelly roll pan or large cookie sheet and some parchment paper. Place parchment paper under the pan and trace pan, then cut it out. Then lay the parchment paper on the inside of the pan.

Pour out granola bar mixture onto parchment paper. Use a second cookie sheet to push down on granola mixture and make it flat. Then spread the chocolate chips on toip and press down again.

Allow to cool on the counter or in the fridge. Once cooled lift the parchment paper out of the pan and onto the counter. Cut the granola bars into the size of your choosing. Bites, bars, but keep them sized smart!
