Shrimp Quinoa with Fresh Kiwi Salsa

My Nutirtionist/Paramedic/Fireman friend Paul Shoemaker from NLC shared this yummy recipe with me that he came up with himself that you might want to try!

Shrimp & Quinoa w/Fresh Kiwi Salsa

(Serving size 2) I cup Quinoa 12 fresh shrimp (substitute with frozen peeled shrimp) 4 Roma Tomatoes 1 red onion 4 Kiwis 1 Lime cilantro Take 1 cup of Quinoa rinse with fresh water Take 1 cup of fresh rinsed Quinoa with 2 cups of water and bring to a boil, reduce to a simmer and cover for about 15 minutes. Take the shrimp and cook tem to flavor with olive oil and salt and pepper in a medium saucepan. You can buy the shrimp deveined and peeled or you can do it yourself. Fresh Salsa- Finely dice 4 Roma Tomatoes, ½ of a red onion, and peel and dice 4 kiwi and place it into a small mixing bowl. Squeeze ½ of a lime into the bowl. Chop cilantro as much or as little that you would like and place into the bowl Finally mix all into the bowl until everything is mixed consistently. Preparation- Place the Quinoa on the plate first, then top with the Kiwi salsa on top of the of the Quinoa. Take the shrimp and place to your desire. Remember you can use as little or as much of each thing as you want to serve you hunger. Approximately 400 calories per serving.
