So my firend Sarah shared a recipe that is to die for! I make it at least once a week to put in my salads and my family loves to just eat it with grilled veggies.
Garlic Seasoning:
3 Tbsp Kosher Salt
1 Tbsp Granulated Garlic (Granulated is important.... garlic powder is too strong!)
1 Tbsp Coarse Ground Black Pepper
Butterfly the chicken.... (basically cut them in 1/2)

Put the chicken in a single layer in a ziploc bag and pound it with the flat side of a meat tenerizer until they are all the same thickness......

Pull the chicken out and sprinkle it with garlic seasoning mix on both sides. Then place on griddle. Cook unitl the chicken is almost white and you can see juices laying on top of the chicken. Then flip! (the pictured chicken is not ready to flip)

Cook on other side until you see the juices laying on top of the chicken. Take off the griddle and put on a plate and cover with foil. Let "rest" for about 10 minutes. You can cut it up and put it in ziploc bags for your salads all week.....

or leave as breasts to eat for dinner with some green beans or grilled veggies. As you let the chicken "rest" juices will come out and that's how you know you did good!

Thanks Sarah for the fabulous recipes!! Keep them coming!! We love them!
